The Joy of Eating


I have always enjoyed eating out, not because my wife is not a good cook, because she is. I just really enjoy going to a restaurant. This is something that I can’t really do, not with the coronavirus loose in the land, at least not right now.
The first really good restaurant I remember was the Swanky Club. My parents took our family there a couple of times, but not often. It was a lot more expensive than most cafes in Boulder City. I remember that there were so many different kinds of food you could order.
I remember eating at the Flamingo in Las Vegas a couple of times. I saw the Flower Drum Song there. I was pretty new at the deciding what to order, and my Dad helped me out. I ordered, with his help, squab, which of course is pigeon, a thing I didn’t know. It sure wasn’t much to eat. They say it tastes like chicken, but there wasn’t enough of it to really tell. I’m sure my dad got a kick out of watching me try to find something to eat. Years later I took Joy out there to see the Smothers Brothers.
When I was dating Joy, we went to the Blue Danube in Las Vegas. I really liked the food there. It was a Bavarian restaurant. On our honeymoon we went to Fong’s Garden on Charleston Blvd. in Las Vegas. That may where I got the taste for Chinese food.

One of the places I enjoyed taking Joy to was Della Fontana’s with Mediterranean style food. I remember that there were seven courses. It was located just off State Street in Salt Lake. I can eat quite a bit, but by dessert I was always pretty full.
One time when Stephen Lukas came to visit, he took the entire family to La Calle, a very expensive restaurant up the canyon in Salt Lake City. I remember the bill was over a thousand dollars. He was just a little put out when a couple of kids ordered escargot at fifty dollars a plate, just to see what it was and then didn’t finish it. I myself had no desire to eat snails. The food was good, but not good enough to justify the cost. I do remember that the servers seemed to have everything pushed up from the bottom and in from the sides and were apparently just waiting for some kind of explosion that might cause them to go running from the room. Joy was really not very happy that I had noticed that.
I worked at the Frosty Freeze as a high school student, and I really enjoyed their ice cream that was dipped in chocolate that froze hard when you dipped the cone into it.
Sizzler is one of my favorite places to eat, but it is really not too fancy a place, but the food is good and in great supply. I enjoy many different kinds of restaurants. I like almost all Thai restaurants.
McDonald's is probably one of my very favorite places right now. I can drive up and get a couple of breakfast burritos any time I want. Well, I’m sure that there are other places that I have eaten that are good, if not memorable. I think you can tell I truly enjoy eating out. Something I can’t do now during this pandemic. I’m afraid I may wake up some night with a burrito in my hands and not remember going out to get it.

November 2019 Carl Stubbs As a young man, I wanted to follow in my father’s footsteps as far as the Church was concerned. He had a strong testimony of the gospel, and he instilled that belief into me by his example. There were many people in my life that helped me along the way. The Board of Education

As I watch several of my children who are in education work during this coronavirus, I see them using the internet to reach their students. This writing will probably let you know that I started teaching many years ago. I will help you out with that. The first year I taught in public school was 1968. It was at Orem High School. Carl Stubbs in classroom D-2, 1985 In my room, D-2, the chalkboards were black. Not long after, it was determined that green was a much better color, easier for the students to see. I was not teaching there long before they came in one summer and put in the new improved green boards. They were still called blackboards by the teachers and students. These boards worked just fine for many years. I should deviate from the story of boards to let you know that my penmanship is not good. In fact, it is terrible. In fact, I remember in college I would take good notes, but have to hurry home and type them before I forgot what they said. I had a difficult time...

Kansas

Written on October 12, 2020 As a young man between eighth and ninth grade, I had the opportunity to go from Boulder City to Kansas to work on my uncle’s farm. I say given the opportunity, but I was really just shipped out. His farm was in the southwest corner of Kansas. Looking back after sixty-two years I realize that my parents, my dad, in particular, wanted me out of town. I’m not sure why, but I guess I was not all that enjoyable to have around. I can’t even remember the name of the little towns they lived by, but I remember the farm. I suspect that my uncle Harry and his wife Inez were not that excited to have me there, but they treated me ok. I was there for about three months. They had two sons who were older than me. Duane was eighteen and Manley was about twenty. An old wheat truck like the one on my uncle's farm I got to work on the family farm driving a tractor, a large wheat truck, and a 1947 Kaiser-Frazer car.
